As an avid backpacker, camper, and forest bather, I love exploring the forests and mountains of Washington and Oregon. As a trained chef and food justice advocate, I am unbelievably disappointed by most of the foods typically associated with these activities.
On car camping trips, you find rubbery marshmallows and bland hot dogs made from factory farm-derived meats. Or, after an exhilerating, 12-mile day of tackling multiple mountain passes in the backcountry, how can you possibly satisfy yourself with a dusty pouch of poorly-seasoned bits of meat and vegetable matter of indeterminate sourcing, especially for multiple days at a time?
Why can't you have a meal just as beautiful as the view?
Peak Provisions is a new project that will share recipes and inspiration for creating delicious and nutritious meals made from real ingredients for dining at campsites and in the backcountry. This website combines my two greatest passions - food and hiking - and I can't wait to dive in.
